– The temperature is difficult to control and does not hold steady like I expected it would. It is either too cold or too hot, making it difficult if you want to smoke something low and slow (which is what most people want).

– It is small inside. After the first year of use, we already had to replace the grates as they began rusting very quickly and needed to be replaced before continuing with our cooking plans.

– There are only two front wheels and one back wheel, so transportation has been a challenge at times when we try to keep this thing outside on our patio during non usage periods – we have considered buying a dolly for this reason alone! If you don’t have bricks or pavers then you’ll need to buy something that can help you move it around on grass or dirt.

– There is no ash tray so the ashes just pile up at the bottom of the smoker, which is very difficult to clean out when needed. The more often you use this thing, the more often you will have to clean out the glass and grates (which are not dishwasher safe).

– It has a hard time getting hot enough for slow cooking meats like pork shoulder – after four hours it still did not reach 200 degrees Fahrenheit inside of meat! But if you put ribs in there at 185 degree temperature then they get over smoked pretty quickly, but end up tasting like charcoal. Also – beware of putting really fatty cuts into this machine, if the meat is above its recommended grease level then grease will drip into the bottom of this grill and end up making your food taste like it has been marinated in fat.

– The water bowl design was poorly planned out because it turned into a huge mess every time we used it, spilling over onto our deck. Eventually, I ended up taping the water bowl to the side so at least there wouldn’t have any more spills inside or outside of this thing!

– Concerning to what you are cooking – if you want ribs that fall off the bone easily, slow cooked for hours on end, then these are NOT THE RIBS FOR YOU! If you leave these things in there for hours longer than they should have been then the meat just falls apart – but that’s not what you want for ribs!

– The metal grates are poorly designed and do not mesh well with the water bowl underneath them, which causes hot spots in some areas of the smoker (so even if your grill is at 275 degrees Fahrenheit it could feel like 298 or 300 depending on where you placed your food). Try to make sure that you rotate your food every hour so that one area does not get over cooked. This will cause an uneven distribution of heat which can cause hot spots inside this thing – something that I wish was explained more clearly before purchasing this pellet grill.

– Our first smoke hollow lasted roughly 1 year before burning out, wasn’t too bad considering we had already replaced the grates, and we heard that this model was made better than previous models by their company. It is not really made well enough to last past a couple of years, but it’s cheap (in price) so you get what you pay for I guess.

– Lastly, when smoking meats make sure you keep an eye on how much smoke is coming out of this grill because if you let the smoke build up in here without venting then that will give your food a bitter aftertaste – something that people would not want when trying to cook ribs and other low and slow cooked meats where flavor really matters! Watching the smoke levels inside may take some getting used to but in the end if still taste good.
