First, we put a small chunk of wood directly on the coals and waited for it to catch fire. (Note: We used mesquite chunks in the test.) Once they were all cooked, we opened the lid and grabbed a fork. The Classic chicken was juicy with a crunchy crust, but it wasn’t crispy. Pieces of the breading stuck to the grate too easily. The same was true of the Deep Fried chicken – it pretty much fell apart when touched with a fork. But both pieces of Quick & Crispy fried chicken came off in big, satisfying chunks!
